  1. Press tofu to remove excess water and cut into cubes. In a bowl, mix soy sauce, rice vinegar, sesame oil, and cornstarch. Set aside. Heat vegetable oil in a pan and add tofu cubes. Cook until golden brown. Remove from pan and set aside. In the same pan, add garlic, ginger, and red chili flakes. Cook for a minute. Add bell peppers, zucchini, and scallions. Stir-fry for a few minutes. Add peanuts and cooked tofu. Pour the sauce mixture over the ingredients. Stir well to coat. Cook for a few more minutes until the sauce thickens. Serve hot with steamed rice.
