Israeli couscous, also known as pearl couscous, is a type of pasta made from semolina flour. It was developed in Israel in the 1950s as a rice substitute.

In a medium saucepan, bring vegetable broth to a boil. Add Israeli couscous, reduce heat to low, cover, and simmer for 10-12 minutes or until couscous is tender.

In a large skillet, heat olive oil over medium heat. Add red bell pepper, red onion, and garlic cloves. Sauté for 5 minutes or until vegetables are softened.

Add cherry tomatoes to the skillet and cook for an additional 2 minutes.

In a large bowl, combine cooked couscous, sautéed vegetables, fresh parsley, lemon juice, salt, and black pepper. Toss gently to combine.
