Indian-Style Red Velvet Okra and Tomatillos

Wash and pat dry the okra and tomatillos. Cut the okra into bite-sized pieces and quarter the tomatillos.

Heat oil in a pan and add minced garlic and ginger. Sauté for a minute.

Add chopped onion and cook until translucent.

Add turmeric powder, red chili powder, cumin powder, coriander powder, and salt. Mix well.

Add the okra, tomatillos, and red bell pepper. Stir-fry for 10-12 minutes until the vegetables are cooked but still retain their crunch.
