Indian-style Lentils
Lentils are a staple in Indian cuisine and are a great source of plant-based protein.
This is vegan, gluten free and high protein recipe. Dish can be prepared in 60 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 14.

Rinse the lentils and soak them in water for 30 minutes.

In a large pot, heat oil and sauté chopped onions until golden brown.

Add ginger and garlic and sauté for another minute.

Add chopped tomatoes and cook until they turn mushy.

Add turmeric powder, cumin powder, coriander powder, garam masala, chili powder, and salt. Mix well.

Drain the soaked lentils and add them to the pot. Stir well.

Add water and bring to a boil. Reduce heat, cover, and simmer for 25-30 minutes or until lentils are cooked.

Garnish with freshly chopped cilantro.

Serve hot with rice or bread.
