Indian-Spiced Stuffed Cauliflower
Cauliflower is a versatile vegetable that can be used as a low-carb substitute for rice or mashed potatoes.

Preheat the oven to 400°F (200°C).

Cut out the core of the cauliflower and steam it for 10 minutes until slightly tender.

In a pan, heat 2 tablespoons of oil and sauté the onion, garlic, and ginger until golden.

Add the tomatoes, cashews, raisins, and all the spices. Cook for 5 minutes.

In a separate pan, heat 1 tablespoon of oil and stir-fry the potatoes, carrots, and green peas until cooked.

Combine the sautéed mixture with the stir-fried vegetables and mix well.

Stuff the cauliflower with the vegetable mixture and place it in a baking dish.

Bake for 30 minutes or until the cauliflower is tender.

Garnish with cilantro and serve hot.
