Eggplants are actually a fruit, not a vegetable, and belong to the nightshade family.
This is vegan and gluten free recipe. Dish can be prepared in 45 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 8.

Preheat the grill or oven to 400°F (200°C).

Slice the eggplants into 1/2-inch thick rounds.

Brush both sides of the eggplant slices with olive oil and season with salt and black pepper.

Grill or bake the eggplant slices for about 5 minutes on each side, until tender and lightly browned.

In a separate pan, heat olive oil over medium heat and sauté garlic until fragrant.

Add diced tomatoes, basil, salt, and black pepper to the pan and cook for 5 minutes.

Place the grilled/baked eggplant slices on a serving dish and spoon the tomato mixture over them.

Sprinkle with grated Parmesan cheese.

Let the dish rest for 5 minutes before serving.
