Eggplants are actually a fruit, not a vegetable, and belong to the nightshade family.

  2. Slice the eggplants into 1/2-inch thick rounds.
  3. Brush both sides of the eggplant slices with olive oil and season with salt and black pepper.
  4. Grill or bake the eggplant slices for about 5 minutes on each side, until tender and lightly browned.
  5. In a separate pan, heat olive oil over medium heat and sauté garlic until fragrant.
  6. Add diced tomatoes, basil, salt, and black pepper to the pan and cook for 5 minutes.
  7. Place the grilled/baked eggplant slices on a serving dish and spoon the tomato mixture over them.
  8. Sprinkle with grated Parmesan cheese.
