Preheat the oven to 325°F (165°C).

In a large mixing bowl, combine rolled oats, chia seeds, ground cinnamon, and salt.

In a small saucepan, warm honey and coconut oil over low heat until melted. Remove from heat and stir in vanilla extract.

Pour the honey mixture over the dry ingredients and mix until well coated.

Spread the mixture evenly on a baking sheet lined with parchment paper.

Bake for 15-20 minutes, stirring halfway through, until golden brown.

Remove from the oven and let it cool completely.

Once cooled, mix in dried fruits.
