  1. In a large bowl, combine rice flour, potato starch, tapioca flour, xanthan gum, salt, and sugar. Mix well.
  2. In a separate bowl, dissolve yeast in warm water. Let it sit for 5 minutes until frothy.
  3. Add coconut milk, vegetable oil, vanilla extract, pineapple juice, crushed pineapple, and raisins to the yeast mixture. Stir well.
  4. Gradually add the wet mixture to the dry ingredients. Mix until well combined.
  5. Grease a loaf pan and transfer the dough into it. Cover with a clean kitchen towel and let it rise in a warm place for 1 hour.
  6. Preheat the oven to 180°C (350°F).
  7. Bake the bread for 30 minutes or until golden brown.
  8. Remove from the oven and let it cool in the pan for 10 minutes. Then transfer to a wire rack to cool completely.
  9. Slice and serve.
