Herbed Vegetable Quinoa Soup with Swiss Chard

Rinse the quinoa under cold water. Chop the Swiss chard, carrots, celery, onion, and garlic.

In a large pot, heat the olive oil over medium heat. Add the onion and garlic and sauté for 2-3 minutes until fragrant.

Add the carrots and celery and cook for another 3-4 minutes.

Add the vegetable broth, quinoa, and herbs (thyme and rosemary). Bring to a boil.

Reduce heat, cover, and simmer for 15-20 minutes until the quinoa is cooked and vegetables are tender.

Stir in the Swiss chard and cook for an additional 2-3 minutes until wilted.

Season with salt and pepper to taste.
