  1. In a large bowl, combine the flour, yeast, and salt. Mix well.
  2. Add the olive oil and water. Mix until a dough forms.
  3. Knead the dough on a lightly floured surface for about 5 minutes, until smooth and elastic.
  4. Place the dough in a greased bowl and cover with a clean kitchen towel. Let it rest for 30 minutes.
  5. Preheat the oven to 425°F (220°C).
  6. Punch down the dough and divide it into 4 equal portions.
  7. Roll out each portion into a thin circle or rectangle shape.
  8. Place the flatbreads on a greased baking sheet.
  9. Brush the tops of the flatbreads with olive oil and sprinkle with fresh herbs.
