  1. Boil the potatoes until tender, then peel and mash them.
  2. In a pan, heat oil and sauté onions, green chili, ginger, and garlic until golden brown.
  3. Add turmeric powder, cumin powder, garam masala, and salt. Mix well.
  4. Add the mashed potatoes and coriander leaves. Mix until well combined.
  5. Cut the phyllo pastry sheets into squares.
  6. Place a spoonful of the potato mixture onto each square and fold into a triangle.
  7. Seal the edges with water.
  8. Heat oil in a deep pan and fry the samosas until golden brown.
  9. Serve hot with chutney or sauce.
