Preheat the oven to 350°F (175°C). Grease a loaf pan.

In a large bowl, whisk together the pumpkin puree, maple syrup, coconut oil, almond milk, flaxseed meal, water, and vanilla extract.

In a separate bowl, combine the whole wheat flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt.

Gradually add the dry ingredients to the wet ingredients and mix until just combined.

Fold in the walnuts.

Pour the batter into the prepared loaf pan and smooth the top.

Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.

Remove from the oven and let it cool in the pan for 10 minutes.
