Rinse the quinoa under cold water.

In a medium saucepan, bring 2 cups of water to a boil. Add the rinsed quinoa and a pinch of salt. Reduce heat to low, cover, and simmer for 15 minutes or until the water is absorbed.

Meanwhile, trim the tough ends of the asparagus and cut into 2-inch pieces.

Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the asparagus and sauté for 5-7 minutes until tender-crisp.

In a small bowl, whisk together the lemon juice, remaining olive oil, minced garlic, salt, and black pepper.

Once the quinoa is cooked, remove from heat and let it rest for 5 minutes. Fluff with a fork.

Transfer the cooked quinoa to a large serving bowl. Add the sautéed asparagus and drizzle with the lemon dressing. Toss gently to combine.

Garnish with fresh parsley and serve warm or at room temperature.
