  2. In a medium saucepan, bring 2 cups of water to a boil. Add the rinsed quinoa and a pinch of salt. Reduce heat to low, cover, and simmer for 15 minutes or until the water is absorbed.
  3. Meanwhile, trim the tough ends of the asparagus and cut into 2-inch pieces.
  4. Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the asparagus and sauté for 5-7 minutes until tender-crisp.
  5. In a small bowl, whisk together the lemon juice, remaining olive oil, minced garlic, salt, and black pepper.
  6. Once the quinoa is cooked, remove from heat and let it rest for 5 minutes. Fluff with a fork.
  7. Transfer the cooked quinoa to a large serving bowl. Add the sautéed asparagus and drizzle with the lemon dressing. Toss gently to combine.
