Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.

In a large mixing bowl, combine the amaranth flour, gluten-free flour blend, baking powder, salt, and coconut sugar.

In a separate bowl, mix together the almond milk and apple cider vinegar. Let it sit for 5 minutes to curdle.

Add the olive oil, chia seeds, and water to the almond milk mixture. Stir well.

Pour the wet ingredients into the dry ingredients and mix until a dough forms.

Transfer the dough onto the prepared baking sheet and shape it into a round loaf.

Use a sharp knife to score an 'X' on the top of the loaf.
