  1. Rinse and drain the black beans.
  2. In a large pot, heat olive oil over medium heat.
  3. Add chopped onion, minced garlic, diced red bell pepper, sliced carrot, and sliced celery stalk. Cook until vegetables are tender.
  4. Add cumin powder, chili powder, bay leaf, salt, and black pepper. Stir well.
  5. Add black beans and vegetable broth. Bring to a boil, then reduce heat and simmer for 30 minutes.
  6. Remove bay leaf and blend the soup until smooth using an immersion blender or a regular blender.
  7. Stir in lime juice and chopped cilantro.
  8. Serve hot and garnish with additional cilantro if desired.
