Preheat the oven to 350°F (175°C).

In a large bowl, combine the oatmeal, whole wheat flour, coconut oil, maple syrup, cinnamon, nutmeg, vanilla extract, and salt. Mix well until the ingredients are fully combined and form a dough-like consistency.

Press the dough into the bottom of a greased baking dish to form the crust.

Bake the crust in the preheated oven for 10 minutes.

Meanwhile, peel and dice the sweet potatoes. Steam or boil them until they are soft and easily mashed.

Mash the cooked sweet potatoes until smooth.

Remove the crust from the oven and spread the mashed sweet potatoes evenly over the crust.

Return the dish to the oven and bake for an additional 30 minutes, or until the sweet potato layer is set.
