  1. Soak the soy beans in water overnight.
  2. Drain and rinse the soy beans.
  3. Heat oil in a pan and add chopped onion, garlic, and ginger. Saute until golden brown.
  4. Add chopped tomatoes and cook until soft.
  5. Add turmeric powder, coriander powder, cumin powder, red chili powder, and salt. Mix well.
  6. Add soaked soy beans and water. Cover and simmer for 20 minutes.
  7. Remove the lid and cook for another 10 minutes until the curry thickens.
  8. Serve hot with rice or roti.
