Remove the hazelnuts from the oven and let them cool.

In a dry skillet, toast the fennel seeds, cumin seeds, coriander seeds, and sesame seeds over medium heat until fragrant, about 2-3 minutes.

Transfer the toasted seeds to a mortar and pestle or a food processor.

Add the cooled hazelnuts, mint or thyme, and salt to the mortar or food processor.

Grind the mixture until it forms a coarse texture, with some larger pieces of nuts remaining.
