Harira – Red Lentil Soup
Harira is a traditional Moroccan soup often served to break the fast during Ramadan.

Rinse the red lentils under cold water and set aside.

In a large pot, heat olive oil over medium heat.

Add diced onion, carrots, celery, and minced garlic. Sauté until vegetables are softened.

Stir in tomato paste, cumin, coriander, turmeric, ginger, cayenne pepper, salt, and black pepper. Cook for 1-2 minutes.

Add red lentils, canned tomatoes, and vegetable stock. Bring to a boil, then reduce heat and simmer for 45 minutes to 1 hour, or until lentils are tender.

While the soup is cooking, chop cilantro and parsley.

Once the soup is done, remove from heat and let it rest for 10 minutes.

Serve the soup hot, garnished with chopped cilantro, parsley, and a squeeze of lemon juice.
