  2. Wash and scrub the sweet potatoes and russet potatoes. Cut them into 1/2-inch thick slices.

  4. Brush both sides of the potato slices with the olive oil mixture.
  5. Place the potato slices on the preheated grill and cook for about 4-5 minutes per side, or until they are grill marked and cooked through.
  6. Remove the potatoes from the grill and let them rest for 5 minutes.
  7. Garnish with chopped parsley before serving.
