Vegan Mac and “Cheese”

Cook macaroni according to package instructions. Drain and set aside.

In a blender, combine cashews, nutritional yeast, lemon juice, garlic powder, onion powder, Dijon mustard, turmeric powder, salt, and water. Blend until smooth and creamy.

In a large saucepan, heat olive oil over medium heat. Add the cashew mixture and cook for 5 minutes, stirring constantly.

Add the cooked macaroni to the saucepan and stir until well coated.

In a small skillet, heat olive oil over medium heat. Add bread crumbs and cook until golden brown.

Serve the vegan mac and "cheese" topped with toasted bread crumbs and fresh parsley.
