  2. Cut the romaine lettuce in half lengthwise and brush with olive oil.
  3. Grill the romaine lettuce for 2-3 minutes per side or until lightly charred.
  4. Remove the lettuce from the grill and let it rest for 5 minutes.
  5. Meanwhile, prepare the antipasto ingredients by halving the cherry tomatoes, slicing the red onion, and chopping the cucumber.
  6. In a large bowl, combine the grilled romaine lettuce, cherry tomatoes, Kalamata olives, red onion, cucumber, olive oil, balsamic vinegar, salt, and black pepper.
  7. Toss everything together until well coated.
