Grilling romaine lettuce brings out a smoky flavor and adds a unique twist to traditional salads.

Preheat the grill to medium-high heat.

Cut the romaine lettuce in half lengthwise and brush with olive oil.

Grill the romaine lettuce for 2-3 minutes per side or until lightly charred.

Remove the lettuce from the grill and let it rest for 5 minutes.

Meanwhile, prepare the antipasto ingredients by halving the cherry tomatoes, slicing the red onion, and chopping the cucumber.

In a large bowl, combine the grilled romaine lettuce, cherry tomatoes, Kalamata olives, red onion, cucumber, olive oil, balsamic vinegar, salt, and black pepper.

Toss everything together until well coated.

Garnish with fresh basil leaves and Parmesan cheese.
