  2. Remove from heat and let it rest for 5 minutes. Transfer the polenta to a greased baking dish and spread it evenly. Let it cool completely.
  3. Preheat a grill or grill pan over medium heat. Brush the zucchini, red bell pepper, and red onion slices with olive oil. Season with salt and black pepper.
  4. Grill the vegetables for 3-4 minutes per side until tender and slightly charred. Remove from heat and let them cool.
  5. Once the polenta has cooled, cut it into squares or rectangles of desired size.
  6. Preheat a pan over medium heat and brush with olive oil. Add the polenta slices and cook for 3-4 minutes per side until crispy and golden brown.
  7. To assemble the sandwich, spread vegan mayo on one side of each slice of ciabatta bread.
