  2. Add spinach, broccoli, and zucchini to the pot. Cook for 5 minutes until vegetables are slightly tender.
  3. Pour in vegetable stock and bring to a boil. Reduce heat and simmer for 10 minutes.
  4. Use an immersion blender to puree the soup until smooth.
  5. Stir in coconut milk, lime juice, salt, and black pepper. Simmer for another 5 minutes.
  6. Remove from heat and let the soup rest for 5 minutes.
  7. Serve the green soup with ginger hot, garnished with a sprinkle of black pepper.
