Wash the rice thoroughly and soak it in water for 30 minutes.

In a blender, blend spinach, cilantro, green chilies, and garlic with some water to make a smooth paste.

Heat olive oil in a pan and add the blended paste. Cook for 2 minutes.

Drain the soaked rice and add it to the pan. Stir well.

Add vegetable broth, lime juice, salt, and black pepper. Mix well.

Bring the mixture to a boil, then reduce the heat to low and cover the pan.

Cook for 15-20 minutes or until the rice is cooked and fluffy.
