In a blender, combine green chilies, garlic cloves, shallots, lemongrass stalks, galangal, coriander roots, kaffir lime zest, coriander seeds, cumin seeds, peppercorns, salt, and lime juice. Blend until a smooth paste is formed.

Heat vegetable oil in a pan over medium heat. Add the green curry paste and sauté for 2-3 minutes until fragrant.

Add your choice of vegetables, tofu, or meat to the pan and cook until they are tender.
