Soak the dried white beans overnight in water.

Drain and rinse the soaked beans.

In a large pot, heat olive oil over medium heat.

Add chopped onion, carrot, celery, and minced garlic. Sauté until vegetables are tender.

Stir in tomato paste and cook for another minute.

Add soaked beans, vegetable broth, bay leaves, dried oregano, salt, and black pepper.

Bring the soup to a boil, then reduce heat and simmer for about 1 hour or until beans are tender.

Remove bay leaves and stir in fresh lemon juice.

Serve hot, garnished with fresh parsley.
