Quinoa with Spinach and Roasted Almonds
Quinoa is actually a seed, not a grain, and it is considered a complete protein because it contains all nine essential amino acids.
This is vegan, gluten free and high protein recipe. Dish can be prepared in 35 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 8.

Rinse the quinoa thoroughly under cold water.

In a medium saucepan, bring 2 cups of water to a boil and add the rinsed quinoa. Reduce heat, cover, and simmer for 15 minutes or until all the water is absorbed.

In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.

Add spinach to the skillet and cook until wilted, about 3-4 minutes.

In a small bowl, whisk together lemon juice, salt, and black pepper.

Once the quinoa is cooked, fluff it with a fork and transfer it to the skillet with spinach.

Pour the lemon juice mixture over the quinoa and spinach. Stir well to combine.

Remove from heat and let it rest for 5 minutes.

Meanwhile, roughly chop the roasted almonds.

Serve the quinoa with spinach and roasted almonds, garnished with chopped almonds.
