Golden Carrot Soup
Carrots are rich in beta-carotene, which gives them their vibrant orange color and is converted to vitamin A in the body.
This is vegan and gluten free recipe. Dish can be prepared in 55 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 10.

Peel and chop the carrots, onion, and garlic.

Heat olive oil in a large pot over medium heat.

Add the chopped onion and garlic to the pot and sauté until softened.

Add the chopped carrots, turmeric powder, ginger powder, salt, and black pepper to the pot. Stir well to coat the carrots with the spices.

Pour in the vegetable broth and bring to a boil. Reduce heat and simmer for about 20 minutes, or until the carrots are tender.

Remove the pot from heat and let it cool slightly.

Transfer the soup to a blender and blend until smooth.

Return the blended soup to the pot and stir in the coconut milk.

Place the pot back on the stove over low heat and cook for another 5 minutes, stirring occasionally.

Remove from heat and let the soup rest for 10 minutes before serving.
