Peel and slice the carrots.

In a large pot, bring water to a boil and add the sliced carrots. Cook for 5 minutes until slightly tender.

Drain the carrots and set aside.

In a skillet, melt the butter over medium heat. Add the ginger and cook for 1 minute.

Add the cooked carrots to the skillet and stir to coat them with the ginger and butter mixture.

Add the Southern Comfort, honey, salt, and black pepper to the skillet. Cook for 10 minutes, stirring occasionally.

Remove from heat and let the carrots rest for 5 minutes.
