  1. Preheat the oven to 350°F (180°C).
  2. Cut the eggplant into 1-inch thick slices.
  3. Sprinkle salt on both sides of the eggplant slices and let them sit for 10 minutes to remove excess moisture.
  4. Rinse the eggplant slices and pat them dry with a paper towel.
  5. Heat 2 tablespoons of vegetable oil in a frying pan over medium heat.
  6. Fry the eggplant slices on both sides until golden brown. Remove from the pan and set aside.
  7. In the same pan, add the remaining 2 tablespoons of vegetable oil.
  8. Add the garlic, ground coriander, and ground cumin. Cook for 1 minute until fragrant.
  9. Remove from heat and let it cool.
  10. In a food processor, blend the walnuts, cilantro, and the cooled garlic mixture until smooth.
  11. Spread the walnut mixture on top of each eggplant slice.
  12. Place the eggplant slices on a baking sheet and bake for 15-20 minutes.
  13. Garnish with pomegranate seeds before serving.
