Preheat the oven to 350°F (175°C).

In a food processor, pulse the oats, almonds, cashews, dried cranberries, dried apricots, and dates until coarsely chopped.

In a small saucepan, heat the maple syrup, peanut butter, vanilla extract, cinnamon, and salt over low heat until well combined.

Pour the saucepan mixture over the chopped ingredients in the food processor and pulse until the mixture comes together.

Press the mixture into a lined baking dish and bake for 20-25 minutes, or until golden brown.

Remove from the oven and let it cool in the dish for 30 minutes.
