  1. Heat vegetable oil in a large skillet or wok over medium-high heat.
  2. Add minced garlic and ginger, and cook until fragrant.
  3. Add sugar snap peas, snow peas, and frozen peas, and stir-fry for 2-3 minutes.
  4. Push the vegetables to one side of the skillet, and add beaten eggs to the other side. Scramble the eggs until cooked through.
  5. Add cooked rice to the skillet, and stir-fry for 3-4 minutes, breaking up any clumps.
  6. Stir in soy sauce, sesame oil, salt, and black pepper.
  7. Add chopped scallions and stir-fry for an additional 1-2 minutes.
  8. Remove from heat and let it rest for 5 minutes before serving.
