  1. Boil water in a large pot and cook the fresh spinach for 2 minutes. Drain and squeeze out excess water. Chop the spinach.
  2. In a mixing bowl, combine the chopped spinach and vegan cheese. Season with salt and black pepper. Mix well.
  3. Lay out the vegan wonton wrappers and spoon a small amount of the spinach and cheese mixture onto each wrapper. Fold the wrapper over and press the edges to seal the ravioli.
  4. In a separate pan, heat olive oil over medium heat. Add minced garlic and sauté until fragrant.
  5. Add sliced zucchini to the pan and cook until tender.
  6. In a blender, combine the cooked zucchini, almond milk, nutritional yeast, salt, and black pepper. Blend until smooth and creamy.
  7. Cook the ravioli in boiling water for 3-4 minutes or until they float to the surface. Drain.
  8. Serve the ravioli with the creamy vegan zucchini sauce. Garnish with fresh basil leaves.
