Heat vegetable oil in a large skillet or wok over medium heat. Add chopped onion and minced garlic, and cook until onion becomes translucent.

Add diced carrots and frozen peas, and stir-fry for 2-3 minutes until vegetables are tender.

Push the vegetables to one side of the skillet, and pour beaten eggs into the other side. Scramble the eggs until cooked through.

Add cooked rice to the skillet, and stir-fry for 2-3 minutes, breaking up any clumps.

Pour soy sauce over the rice and vegetables, and season with salt and black pepper. Stir well to combine.

Cook for an additional 2-3 minutes until everything is heated through.

Remove from heat and garnish with chopped green onions.

Let the fried rice rest for 5 minutes before serving.
