This is vegan and gluten free recipe. Dish can be prepared in 45 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 12.

Rinse the quinoa under cold water.

In a medium saucepan, bring 2 cups of water to a boil. Add the quinoa and reduce heat to low. Cover and simmer for 15 minutes or until the water is absorbed.

Remove from heat and let it rest for 10 minutes. Fluff the quinoa with a fork.

In a large bowl, combine the cooked quinoa, cherry tomatoes, cucumber, red bell pepper, yellow bell pepper, red onion, fresh parsley, and fresh mint.

In a small bowl, whisk together the lemon juice, olive oil, salt, and black pepper.

Pour the dressing over the quinoa salad and toss to combine.

Serve chilled and enjoy!
