  1. Peel and chop the beets, onion, and garlic.
  2. In a large pot, heat some oil over medium heat and sauté the onion and garlic until fragrant.
  3. Add the chopped beets and vegetable broth to the pot. Bring to a boil and then reduce the heat to simmer for about 20 minutes, or until the beets are tender.
  4. Use an immersion blender or transfer the soup to a blender to puree until smooth.
  5. Return the soup to the pot and stir in the five-spice powder, coconut milk, lime juice, salt, and black pepper. Simmer for another 5 minutes.
  6. Serve hot, garnished with fresh cilantro.
