  1. Preheat the oven to 375°F (190°C).
  2. Thaw and drain the frozen spinach.
  3. Heat olive oil in a pan and sauté the onion and garlic until golden.
  4. Add the spinach, dill, parsley, lemon juice, salt, and black pepper to the pan. Cook for a few minutes until well combined.
  5. Remove from heat and let the mixture cool.
  6. Lay out one sheet of phyllo pastry and brush it with melted vegan butter or margarine.
  7. Place another sheet on top and brush with butter again. Repeat this process until you have 6 layers.
  8. Cut the layered phyllo pastry into 6 equal squares.
  9. Place a spoonful of the spinach mixture onto each square and fold it into a triangle shape.
  10. Repeat with the remaining ingredients.
  11. Brush the triangles with more melted vegan butter or margarine.
  12. Bake in the preheated oven for 20-25 minutes, or until golden brown.
  13. Let the triangles rest for 10 minutes before serving. Enjoy!
