Soak the dried white beans in water overnight.

In a large pot, heat olive oil over medium heat.

Add chopped onion and minced garlic cloves. Sauté until golden brown.

Drain the soaked beans and add them to the pot.

Stir in ground cumin, ground coriander, saffron threads, salt, and black pepper.

Add water and bring to a boil. Reduce heat, cover, and simmer for about 1 hour or until the beans are tender.

Remove from heat and let it rest for 10 minutes.
