Peel and slice the carrots into thin strips.

Heat the sesame oil in a pan over medium heat.

Add the garlic and ginger to the pan and sauté until fragrant.

Add the carrots to the pan and stir-fry for 5 minutes.

In a small bowl, mix together the rice vinegar, soy sauce, salt, and black pepper.

Pour the sauce over the carrots in the pan and cook for an additional 2 minutes.
