Wash and scrub the potatoes, then pat them dry.

Slice each potato into thin slices, making sure not to cut all the way through.

Place the potatoes on a baking sheet lined with parchment paper.

Drizzle olive oil over the potatoes, making sure to get in between the slices.

Sprinkle salt, black pepper, garlic powder, dried thyme, and paprika over the potatoes.

Bake in the preheated oven for 60 minutes, or until the potatoes are crispy and golden brown.

Remove from the oven and let them rest for 5 minutes before serving.
