  1. Preheat the oven to 350°F (175°C). Grease a loaf pan with coconut oil.
  2. In a large bowl, mash the ripe bananas until smooth.
  3. Add the eggs, honey, vanilla extract, and coconut oil to the mashed bananas. Mix well.
  4. In a separate bowl, combine the almond flour, coconut flour, baking soda, salt, cinnamon, and nutmeg.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until well combined.
  6. Fold in the chopped walnuts.
  7. Pour the batter into the greased loaf pan and smooth the top.
  8. Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
  9. Remove from the oven and let it cool in the pan for 10 minutes.
  10. Transfer the banana bread to a wire rack and let it cool completely before serving.
