In a large bowl, combine cooked quinoa, peanut butter, honey, cocoa powder, vanilla extract, chia seeds, and mini chocolate chips.

Mix well until all ingredients are evenly combined.

Place the mixture in the refrigerator for 30 minutes to allow it to firm up.

Once firm, roll the mixture into small balls using your hands.

Roll each ball in shredded coconut to coat.

Place the balls on a baking sheet lined with parchment paper.
