Eggplant (Aubergine) Skillet
Eggplants are actually a fruit, botanically classified as a berry, and belong to the nightshade family.

Preheat the oven to 400°F (200°C).

Slice the eggplant into 1/2-inch thick rounds.

Heat olive oil in a skillet over medium heat. Add the onion and garlic, sauté until translucent.

Add the sliced eggplant and cook until golden brown on both sides.

Stir in the tomatoes, basil leaves, salt, and black pepper. Cook for 5 minutes.

Transfer the skillet to the preheated oven and bake for 10 minutes.

Remove from the oven and sprinkle mozzarella cheese on top.

Return to the oven and bake for another 5 minutes, or until the cheese is melted and bubbly.

Allow the skillet to rest for 5 minutes before serving.
