Rinse and soak the black beans overnight.

In a large pot, heat olive oil over medium heat.

Add chopped onion, minced garlic, and diced red bell pepper. Sauté until softened.

Add ground cumin, paprika, salt, black pepper, and bay leaf. Stir well.

Drain and rinse the soaked black beans, then add them to the pot.

Pour in water and bring to a boil.

Reduce heat to low, cover, and simmer for about 1 hour or until the beans are tender.

Remove the bay leaf and garnish with fresh cilantro.
