Green pasta dough gets its vibrant color from the spinach puree, which also adds a subtle earthy flavor to the pasta.

Blanch the spinach in boiling water for 1 minute, then drain and squeeze out any excess water.

In a food processor, blend the spinach until smooth.

In a large mixing bowl, combine the spinach puree, flour, water, olive oil, and salt.

Knead the dough until smooth and elastic, about 5 minutes.

Cover the dough with a damp cloth and let it rest for 30 minutes.

Divide the dough into small portions and roll out each portion into thin sheets.

Cut the sheets into desired pasta shapes.

Bring a large pot of salted water to a boil and cook the pasta for 2-3 minutes, or until al dente.
