Sensational Foil-Pack Vegetables
Foil-pack vegetables are a popular camping dish as they can be easily cooked over a campfire or grill.
This is vegan and gluten free recipe. Dish can be prepared in 40 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 12.

Preheat the grill to medium-high heat.

Cut the zucchini, yellow squash, red bell pepper, and green bell pepper into thick slices.

Thinly slice the red onion and mince the garlic cloves.

In a large bowl, combine the sliced vegetables, minced garlic, olive oil, salt, black pepper, fresh thyme, fresh basil, and fresh parsley. Toss to coat the vegetables evenly.

Tear off 4 large sheets of aluminum foil. Divide the vegetable mixture evenly among the foil sheets.

Fold the foil over the vegetables to create a packet, sealing the edges tightly.

Place the foil packets on the preheated grill and cook for 15-20 minutes, or until the vegetables are tender.

Carefully remove the foil packets from the grill and let them rest for 5 minutes.

Open the foil packets and serve the sensational foil-pack vegetables hot.
