Preheat the oven to 350°F (175°C).

In a large bowl, whisk together almond flour, cocoa powder, instant coffee granules, baking powder, and salt.

In a separate bowl, mix together melted coconut oil, maple syrup, and vanilla extract.

Add the wet ingredients to the dry ingredients and stir until well combined.

Fold in the dark chocolate chips.

Scoop tablespoon-sized portions of dough onto a baking sheet lined with parchment paper.

Bake for 10-12 minutes, or until the edges are set.

Allow the cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
