In a large bowl, combine the rice, chopped onion, chopped tomato, chopped parsley, chopped mint, olive oil, lemon juice, salt, and black pepper. Mix well.

Rinse the grape leaves and remove any stems.

Place a grape leaf on a flat surface, shiny side down. Spoon about 1 tablespoon of the rice mixture onto the center of the leaf.

Fold the sides of the leaf over the filling, then roll it up tightly.

Repeat with the remaining grape leaves and filling.

Place the dolmadakia in a large pot, seam side down, and pour in enough water to cover them.

Bring the water to a boil, then reduce the heat to low and simmer for 45 minutes.

Remove the dolmadakia from the pot and let them rest for 15 minutes before serving.

Serve the dolmadakia warm or at room temperature with lemon wedges, if desired.
