Rinse the navy beans and soak them overnight in cold water.

Add chopped onions, minced garlic, sliced carrots, and sliced celery stalks. Sauté for 5 minutes.

Add the soaked beans, bay leaves, thyme, salt, and black pepper to the pot.

Pour in the vegetable broth and bring to a boil.

Reduce the heat and simmer for 5 to 2 hours, or until the beans are tender.

Remove the bay leaves and thyme sprigs.

Use an immersion blender or a regular blender to blend a portion of the soup until creamy.
